New for 2016! - a two hour cooking class, serving a three course dinner.

Join Chef Amanda Harrison* at The Canadian Canoe Museum for an evening of upscale campfire cooking!  We will start the night with a high protein veggie walnut pate, served with flax and sweet potato crackers.  These snacks can be prepared in advance of a camping trip and Amanda will show you how.  Next, we will serve fresh rainbow trout, with a lesson on filleting fresh fish.  We will season the fish with an herbed compound butter and show you how to cook it over the coals in a salt crust.  The fish will be served with grilled polenta and a fire roasted tomato sauce.  For dessert, a real treat, decadent chocolate hazelnut cake, baked in an orange over the open fire.  Bon appetit!

*Chef Amanda Harrison caught the culinary fever while working at Peterborough’s own Hot Belly Mama’s restaurant. Her passion for cooking took her to Toronto to attend George Brown’s Chef School. Amanda is currently teaching community cooking classes in Peterborough with The Nourish Project.  Amanda is also the coordinator of the President’s Choice cooking school in Lindsay Ontario.  During the holiday season, Amanda offers personal chef services through her catering company, Pig and Peppercorn.
